How to price baked goods

Start with what one item really costs

Divide what one batch of ingredients costs by the number of items it makes, then add the packaging for one item. Many home bakers stop here, which means they work for free.

Pay yourself for your time

Count the hours from getting out the mixer to washing the last pan, multiply by what your time is worth, and divide by the items in the batch. Even $15 an hour adds real money to each item.

Add overhead and a profit margin

Electricity, market fees, permits and gas add up; spread them over what you sell. A profit margin of 20 percent or more leaves money to grow the business.

Then check the market

Look at what similar items sell for at nearby markets and bakeries. If your price is much higher, look for cheaper ingredients or a bigger batch; if it’s lower, you may be underpricing.

Every recipe priced for you, automatically

Home and Hearth Baker works out the cost of every recipe from your own ingredient prices and suggests a price that pays you for your time. When butter goes up, every recipe updates.
